Camille and Mathias Marquet, a young couple, manage Château Lestignac after inheriting the family farm in 2008. They pared the vineyard down to the best sites and introduced a diverse garden and livestock to develop a true polyculture that complements their organic farming style. Their first vintage under the banner of Lestignac was in 2009, and the couple began to introduce biodynamic farming in 2011. The vineyards are worked by horses instead of machines, and biodynamic preparations are increasingly used to reduce the use of sulfur and copper treatments. The majority of the vines are 40 to 60 years old, with selective replanting, and goblet pruning is used to foster a higher, natural acidity. Spontaneous fermentation with indigenous yeasts is always used, and only a touch of sulfites is added at bottling. Chateau Lestignac is committed to sustainability, using organic and biodynamic farming methods to reduce environmental impact and promote biodiversity.
