Louis Salmon Blanc de Blanc Grand Cru - 2008
This cuvée was named after Louis Salmon, Elisabeth Salmon's brother, who was passionate about oenology and was heavily involved in winemaking from the House's inception. The Blanc de Blancs vintage, derived from the best parcels of the Côte des Blancs, is blessed with purity and minerality.
A crystal clear pale gold tint with tiny glints and a nuanced yellow and green patina. A light-filled effervescence that persists and fascinates. The first expression is distinguished by a beautiful, flawless, and complex maturity, as well as yellow fruits and citrus (candied mandarin, limoncello, conference pear). A subtle purity aromatic profile with a chalky, balanced, and crystalline character (cedar and raw butter). A creamy sensation in the mouth with finely chiseled delicacy. Beautifully refreshing balance of natural flavors (citron zest, almond biscuit, and white pepper). This strong wine with a magnificent typicity extends its finish into an aromatic persistence of amazing length (flesh of juicy citrus fruits, cardamom, and vanilla-flavored cream puffs). The distinct character of a magnificent Blanc de Blancs, pure and strong, with a directness that is properly matched to its moderate dose.
Its potential and balance demonstrate a stunning elegance worthy of the most complex culinary combinations (a whole calf sweetbread dish, a creamy seafood risotto).
