The San Vito, a standout creation, is a testament to Matthew's expertise. Crafted from 100% Merlot grown at the base of the Amiata volcano, this wine is a harmony of complexity and elegance. It boasts a deep garnet hue, unraveling layers of blackberries, cassis, and violets, seamlessly transitioning into intricate notes of blond tobacco, graphite, and exotic spices. The palate is greeted with a rich, silky body and well-integrated tannins, culminating in a persistent, aromatic finish.

In contrast, the M.L. Fioretti P.V.D. illustrates Matthew's skill in blending. This intense Petit Verdot-based wine is balanced with Ancellotta, offering a tapestry of red fruit, Mediterranean spice, and a hint of vanilla. The interplay between the Petit Verdot's rich texture and color with the Ancellotta's vibrant acidity and fruit notes results in a harmonious and engaging wine experience.

Further expanding his repertoire, Matthew ventured into new territory with the Santinovo Toscana IGT in 2020. This venture, along with the inaugural vinification of Cabernet Franc from Borgo Santinovo, reflects his belief in the potential of Bordeaux varietals in Tuscany.
