
Saumur-Champigny 'Plume' 2020
Native fermentation, no pumping, mild extraction, and no added sulfites (with the exception of the white) are all part of Dubois' cellar philosophy. The end result is a wine that is true to the grapes that give Saumur-Champigny its character and heritage. Cabernet Franc from the Saumur Champigny region that has a pungent, earthy flavor. Flavors of sour black fruit, wet earth, granite, and a smoky, flinty finish are accompanied by a light body and a highly natty manner of winemaking. Serve with a hearty pork or rabbit stew or aged cheese.
