The vineyard is High Environmental Value certified since 2015 and organic certified since 2020, shaped by short Guyot Simple pruning and ploughed soils with no synthetic products used.\u003cbr\u003e\u003cbr\u003eThe wine is pneumatically pressed, cold racked, and vinified with natural yeasts in a stoneware vertical ovoid tank, then nourished on its lees for ten months of fermentation with no racking until bottling. Best served at 12°C and decanted, it has a potential ageing window of up to 10 years.
