Harvest Technique:Passopisciaro uses green harvesting techniques and makes their final harvest by hand near the end of October, selecting only the best clusters.
Soil:Vulcanic soil, mostly vulcanic sand in the highiest vineyards

Fermentation:After destemming and pressing, the must macerates for around 15 days. A pie de cuve starts fermentation in stainless steel, and a submerged cap extrapolates fruity notes without exaggerating tannins.
Elevage:12 months in concrete tanks, 6 months in big oak casks. Bottling takes place in waning moon June.
