Climate:The vineyards of Sancaba benefit from cooler conditions than most of central Italy: constant cool winds from the nearby Apennine mountains, lower median day temperatures due to the high elevation and good temperature excursions between day and night.
Harvest Technique:Grapes are hand-selected and harvested. Treatments used include sheep manure, copper, sulphur, clay, propolis and grapefruit seed extract.5,000 plants per hectares can be found here.
Soil:Here pinot noir finds suitable nordic conditions as well as quick-draining, calcium rich crumbling soils of galestro and alberese rock which force the roots to dig deep underground and produce mineral rich wines.

Fermentation:Spontaneus fermentation in stainless steel vats for 10 days. 40% of the must fermented in wood, with no temperature control.
Elevage:Aging in large wood vats and barriques, followed by cement tanks
