- Climate:The climate in Maremma is always mild along the coast, with mild winters and temperatures that never drop below zero, plus cool summers that are never hot and humid. Sometimes it never rains in summer, the rainfall is concentrated in winter and spring with some storms in autumn.We are at approximately 100 m a.s.l. and about 10 km from the coast.

- Fermentation:The Sangiovese grapes are handpicked and selected. After destemming, the must ferments in temperature controlled cement vats, starting at 18°C then gradually rising in controlled steps to about 28°C towards the end of the fermentation process. During the maceration which lasts about 20 days, pump overs are carried out daily and towards the end of the period also a short “delestage”. Malolactic fermentation occurs in the cement vats.
- Elevage:Once fermentation is finished the wine is transferred into second fill tonneaux of French oak where it ages for about 6 months. It is then bottle and kept to age in bottle for a period between 6 months and a year.
