Native fermentation, no pumping, mild extraction, and no added sulfites (with the exception of the white) are all part of Dubois' cellar philosophy. The end result is a wine that is true to the grapes that give Saumur-Champigny its character and heritage. "Les Perruches" comes from a single vineyard of old Chenin. This is the smallest cuvee of the property and quantity is extemely limited.
