Mezcal is a unique spirit that encapsulates the rich cultural and geographic diversity of Mexico. Distinctly different from tequila, which is made exclusively from blue agave, mezcal can be produced from more than 30 types of agave, creating a wide range of flavor profiles. Its production method, which often involves roasting the agave hearts in earthen pits before distillation, imparts a characteristic smoky flavor, setting it apart from other spirits.
