Nestled on the high-desert plateau of La Mancha, Bodegas Parra Jiménez is renowned for its production of wines, crafted from a blend of native and international grape varieties grown in certified organic and biodynamic vineyards. For generations, the Parra family has been deeply rooted in the agricultural traditions of La Mancha. However, it wasn't until 1993 that brothers Francisco, Javier, and Luis Parra established their winery in the village of Las Mesas, near Cuenca, and chose to pioneer organic wine production in the area.

In 2004, the Parra family embarked on an ambitious expansion, constructing new facilities at the Cuesta Colorá estate. Their vision was to create a biodynamic, self-sustaining ecosystem. This led them to diversify their agricultural practices, incorporating livestock rearing and the cultivation of garlic, grains, peas, and lentils, thereby completing the agricultural cycle. Today, the estate boasts Sohiscert organic and Demeter biodynamic certifications and produces not only wine but also organic garlic and Manchego cheese.

Gulp Hablo Vamos is an easy drinking, light bodied red that’s packed with vibrant red berry and stone fruit flavors with hints of fresh herbs. Juicy, refreshing and straight up delicious, it’s best served with a light chill.

Climate
High desert climate, with hot days giving way to very cold nights. Large diurnal temperature swings allow the grapes to develop ripe, fruity flavors while maintaining bright acidity. Rainfall is almost non-existent, leading to thick skins and concentrated flavors in the grapes.

Harvest technique
Organic farming practices include: composting, use of fermented manure, slurry, macerated plants, green fertilizers, crop rotations and associations, hedgerows, spaces for the life of the native flora and fauna in the areas of integrated production, soil cover, crop-livestock mixed systems.
Soil
Entresendas vineyard: Alluvial soils that reflect light and heat and ensure good drainage. Olla del Monte vineyard: Chalky red clay soils topped with a fine layer of pebbles that capture and radiate the heat of the sun, protecting the vines during La Mancha's chilly desert nights.
Fermentation
Fermented and aged in temperature controlled stainless steel tanks to preserve the bright, juicy primary fruit flavors. The Tempranillo is fermented separately, and the rest of the blend is co-fermented.
