The Suscol Vineyard is the mecca of vineyards since it can be grown without using any supplemental irrigation or plowing the soil. Both use water, but the no-till method does not release carbon dioxide into the atmosphere during fermentation, and vignerons argue continuously over which is best for California's environment. This vineyard is a little-known gem in the middle of Napa Valley that has been farmed organically for almost a decade. This wine went through a malolactic fermentation and 18 months of aging in neutral wood barrels. This is the first Chardonnay Keep Wines ever produced, and it comes from a very unusual Vineyard that was cultivated entirely by hand by Jack. They picked everything by hand, too.
