ABOUT THIS BOTTLE
“The dames of the inns have adopted three ways to depict old age: at 55, it’s a birbon; at 60, it’s a birbe; after this fatal term, it’s a birbette” (Leo Lespes, 1815-1875). The very old vines of our Clos producing Les Birbettes are older than 60 years-old. They grow on an hectare composed of four plots: 2 of them planted in the 1920’s, right after phylloxera and 2 of them in 1945, at the end of the Second World War. Old vines bring “experience” of dealing with climate change within a production year. They have the capacity to adapt and balance the ripeness. The wine produced with small-sized berries expresses more purity and verticality. Additionally, the salinity shows off the minerality of terroir.
