Only in truly extraordinary years, or millésimes, does Billecart-Salmon produce their "Elisabeth" Brut Rosé, a mix of their finest Pinot Noir and Chardonnay. In 1988, it was made to honor Elisabeth Salmon, who had helped found the company. A radiant appearance, with deep salmon pink tone and gentle shimmering coppery hues. Citrus peels and red berry jelly create a reviving and sensual sensory experience, while the jelly's rich and complex aromas (think: Plougastel strawberries, Mara des Bois peaches, and vine peaches) linger in the background. Beautifully developed and polished aromas, with a signature scent that combines fragrant soft spices and the pulp of wild raspberries. Fruitful convergence of upscale flavors (blood orange, tangerine, and Reinette apple tart). Flavors of citron zest and red and white currants remain in the mouth after the deep, complex flavor fades. The complexity of this wine's character is revealed in its subtleties of texture and flavor. Excellent with poulet de Bresse or Breton langoustines royales, this wine has an aromatic allure and a distinct mineral depth.
