Harvest technique
Guyot and Cordon training systems. Cover crops maintained; pruning completed by late January. Green harvest conducted in June. Harvest takes place in the first week of September.
Fermentation
Fermentation at a controlled temperature of 18°C using selected organic yeast. Conducted in stainless steel tanks of 25hL and 130hL. Gentle manual pressing.
Elevage
Aged 8 months in stainless steel and 3 months in bottle.
