“Attention Cabernet Blanc” is a pure blanc de noir. Nicolas uses his youngest Cabernet Franc to make this very unique cuvee. He presses in whole cluster bunches in small batches. The first 1/3 of the juice, pure blanc de noir, is reserved for the “Attention Cabernet Blanc”. The remaining 2/3’s is blended into the “Ange”, traditional red Cab Franc cuvee.
