| Fermentation: | The grapes are hand-picked into small boxes of approximately 20 kilos and brought to the winery, where they undergo a careful selection process before being crushed. The grapes are chilled overnight to 5°C and then crushed and allowed to cold-soak in tanks for 12 hours at 10°C. The must is transferred to a stainless steel lagar to start the fermentation. At approximately the middle of the fermentation process, the juice is separated from the skins and racked to new 500 L French oak barrels to finish the alcoholic fermentation. |

ABOUT THIS BOTTLE
Founded in 1981 by winemaker Johnny Graham, who represents the fifth generation of his family to make wine in the Douro Valley, Churchill's remains a family-owned independent producer. Quinta da Gricha, Churchill's flagship vineyard, is located in the heart of the Cima Corgo in the Douro Valley and features "lagares" dating back to 1852. Benefiting from a north-facing exposure, Quinta da Gricha produces wines with a raw vibrancy and excellent natural acidity.
