About Domaine de l'Enclos
Domaine de l’Enclos is a Chablis winery founded by brothers Romain and Damien Bouchard, who both learned the art of winemaking by working alongside their father. Today Domaine de L’Enclos is 29 hectares of organically farmed vines. The property is located in the heart of Chablis, in a large estate that was formerly the residence for the Monks of Pontigny Abbey.
Romain and Damien feel that most of their work is done in the vineyards. With a small team, they cultivate the land year-round to take the greatest possible care; Poussard pruning, organic fertilizers, careful trellising, leaf removal, and hand harvesting on all their vintages. The Bouchard’s attach great importance to the life of their soils and vines, with the average vine age being 30 years, and the oldest over 50 years old.
The first vintage vinified at the Domaine was in 2016, in their brand-new, energy conservative, gravity-fed cellar. Vinification is done with ambient yeasts and bacteria and is finished in both stainless-steel and French oak barrels, with up to 18 months on lees. The wines are neither fined, nor cold treated, and minimal sulfur is added prior to bottling.
Domaine de L’Enclos is built on a strong foundation of pedigree, vine age and skill, and has quickly become a very sought-after domaine.
