Il Vulcano di Elisa is a new wine project that started in 2019 with the goal of developing a viticulture approach in full symbiosis with the mountainous terrain of Etna. The vineyards are located in the Trecastagni area on the south side of the volcano, with an average altitude of 650-750 meters above sea level. This is a female-led project, with Elisa, an agronomist and oenologist who has previously worked in different wineries, at the helm. Il Vulcano produces Nerello Mascalese using organic and hand-harvesting methods. The grapes undergo a 15-day maceration and 15-day fermentation, followed by secondary malolactic fermentation and eight months of aging in used oak barrels.
