In the heart of Bovina Center, nestled in the Western Catskills, Isolation Proof crafts small-batch sustainable gins that captures the flavors and character of upstate New York. The distillery serves as the birthplace of each batch, meticulously distilled with the mineral-rich spring water sourced from their hillside. Their commitment to sustainability shines through as over 80% of their gin's ingredients are sourced from New York State; the base of the gins is made from 100% upcycled whey, a dairy by-product that would otherwise be thrown away. The Original Gin is a spirit-forward cross between a London Dry and New American style gin, being earthy and spicy, with a backbone of sweetness from licorice and orange peel, and a signature peppery finish from Cubeb pepper. In addition to the Original Gin, which is available year-round, Isolation Proof also makes a rotating selection of seasonal gins that showcases various ingredients at their peak including ramps for the Spring Gin and apples for the Winter Gin.
