Poco a Poco
Little by little is translated from the Spanish phrase poco a poco. For as long as anyone can remember, this has been their motto in the vineyard. Poco a Poco is the pace at which grapes are grown and wine is produced. Poco a poco is the term used when a row of vines takes several extra years to ascend a stake. It's a slow process, Poco a Poco, when the grapes are picked and sorted individually by hand. Poco a Poco refers to the slow and steady pace of fermentation in a barrel, which might take up to two extra months for some wines. Most products may now be manufactured, ordered, and consumed within a few days. The art of winemaking is beautiful because it requires patience and slow progress.
