Description

A medium to full-bodied red wine made from a local variety and aged in stainless steel. Rich and intense, with notes of red fruits, particularly sour cherry. Slightly earthy with good structure.

Harvest technique
Guyot and Cordon training systems. Cover cropping and pruning completed by the end of January. Green harvest in June, with the main harvest during the first week of September.
Fermentation
Temperature-controlled at 24°C, with selected organic yeast. Fermentation in stainless steel tanks of 25 hL and 130 hL. Gentle manual pressing.
Elevage
Aged for 8 months in stainless steel and 3 months in bottle.
