In honor of Marina Hernandez 3 generations of Hernandez women recreated Marina's black mole recipe used in this distillate. Jessica, her mother Soledad Santiago, and her Grandmother roasted the elements of this unique mole in their traditional comal. When the ingredients are suspended in the still, it creates a rich profile for the final destilado and gives life to Pechuga de Mole Mezcal. Casa San traditions in collaboration with the Hernandez family.

Aroma: Notes of fresh tropical fruit (like peach and banana), combined with floral undertones and a subtle, soft minerality.Palate: Complex and layered, featuring bright fruit flavors, soft baking spices, and distinct earthy clay characteristics.

Smoke Level: Restrained and elegant. It does not possess an overpowering or charred smoke finish, allowing the nuanced flavors of the agave to shine

Harvest technique
Both of this Agaves are vare wildly harvest, around the village of San Francisco Lachigolo in Oaxaca, Jessica Heradez and locals help find this two types of Agaves, Mexicano a shorter agave and the second one a skinny tall agave. Mexicano (Rhodacantha) from 9-12 years old and Tobashiche (Karwinski) 12-15 years to fully matured. We cut down all the leaves of the agaves till the heart (Piña) is visible and take the whole plat from the ground.
