Sebastien David, a passionate advocate of biodynamic viticulture, founded Domaine Sebastien David, a 12-hectare winery located in the heart of the Loire Valley in France. Born into a family of winemakers, Sebastien's goal was to produce wines that reflected the terroir of the Loire Valley and showcased the unique characteristics of Chenin Blanc and Cabernet Franc grapes. He believes that cultivating the land in harmony with nature is essential to producing exceptional wines, which is why he practices biodynamic viticulture, using natural preparations and a lunar calendar to ensure the vines are healthy and balanced. The cellar temperature remains constant all year round at 54.3°F, which leads to longer fermentation that finishes all the present sugar. Amphora and concrete eggs— prized for their ovoid shape, provide the environment for a consistent movement of lees and enriches the wines. Nothing added or taken away in the cellar.
