Champagne Solemme
Champagne Solemme is a family-owned winery situated in the heart of Champagne, France. Founded in the early 1900s, the winery has been passed down through several generations of the family, with each generation building upon the legacy of the last. Champagne Solemme is committed to traditional winemaking methods and uses high-quality, locally-sourced grapes, mainly from the prestigious Côte des Blancs region known for producing some of the world's finest Chardonnay grapes. The family's commitment to sustainability and organic farming practices ensures that only the highest quality grapes are used in their wines. One of the unique features of Champagne Solemme is its use of a small, underground cellar for aging its wines. Olivier Langlais, the current owner, comes from a long line of Champagne growers and has implemented biodynamic practices since taking over the six-hectare vineyard in the Montagne des Reims. Each step of the winemaking process is timed to the lunar calendar, and there is no oak or malolactic fermentations, intentionally allowing the minerality to shine. Champagne Solemme is best known for their Blanc de Blancs Champagne, made exclusively from Chardonnay grapes.
